I’ve gotten some recent emails asking about sprouted bread, also known as Ezekiel bread. Ezekiel bread contains zero flour and is made from several different sprouted grains and legumes. The name comes from the Bible, Ezekiel 4:9 which says…
“Take also unto thee wheat, and barley, and beans, and lentils and millet, and spelt and put them in one vessel and make bread…” Ezekiel 4:9
This was literally a recipe from God as Ezekiel was told Jerusalem was about to be under siege and he needed to warn the people and head out into the desert. I’m not sure how this bread tasted back then, as the other instructions were to bake it over human dung (since they wouldn’t have cows). Rest assured the modern version was made sans dung, and since some have asked me about this, I decided to give it a try.
You can find the bread in the freezer section and for best results, keep it in your freezer. The ingredients range depending on the type you buy. The original version does have wheat, so if you’re in the early stages of The Luminous Plan, I recommend staying gluten-free for the first 8 weeks. Note that organic sprouted wheat and barley are much lower in gluten than when it’s in flour form.
I decided to try the sesame version. The bread is made by Food For Life.
Organic Sprouted 100% Whole Wheat, Filtered Water, Organic Sprouted Barley, Organic Sprouted Millet, Organic Malted Barley, Organic Sprouted Lentils, Organic Sprouted Soybeans, Organic Sprouted Spelt, Fresh Yeast, Organic Wheat Gluten, Sea Salt, Organic Sesame Seeds.
Based on the ingredients, it fits well for the plan. 1 slice is equal to ½ starch and ½ protein serving. I tried a toasted slice with a little almond butter and lo and behold it was DELICIOUS! It was very flavorful and crispy.
I’m not a huge bread person, but lately I’ve wanted to try avocado toast or try some poached eggs on toast again. It also tastes great with a little almond butter. Put 1 oz of almond or peanut butter on 2 slices of toast for a full starch and protein serving at breakfast. You can take the frozen bread straight from the freezer to the toaster without thawing.
You can also make breadcrumbs from Ezekiel bread to use in recipes such as traditional meatballs. Simply throw a few slices in the food processor.
2 oz Avocado
2 TBS Chopped Onion (more or less to taste)
1 tsp Fresh Lime Juice
Season to taste: Salt/Pepper/Siracha Sauce
Mash the avocado, onion and lime juice together. Season at will. Spread half the mixture on each slice of toast.
For Garlic Avocado toast, smear some roasted garlic on the bread, then add the avocado mixture. YUM!

I love that all the grains are organic and non-GMO and because there is no flour, it’s very low on the glycemic index, which means slow insulin rise. I’ve now added it to The Luminous Plan, and you can download the latest copy here:
